Video by Guy Fieri Yields 16 servings Ingredients: ½ cup butter ½ cup brown sugar 1 egg ¾ cup mashed ripe banana ¾ cup granulated sugar 2 ½ cups all-purpose flour 1 tsp. baking soda 1 tsp. baking powder ½ tsp. salt ¼ tsp. ground cinnamon 1 ½ tsp. ground nutmeg ¼ tsp. ground ginger ¾ cup chopped walnuts (optional) ¾ cup raisins (optional) ½ cup dried currants (optional) 1. Preheat oven to 350°F. 2. Beat butter and sugar until fluffy. Add egg, mashed banana and ¾ cup of the sugar. Beat well. Sift in the rest of the dry ingredients, then add the walnuts, raisins, and currants. Mix well. 3. Pour into a 9-inch cake pan, and bake until a toothpick inserted in the center comes out clean, about 50 minutes. Cool on a wire rack, then cut into wedges.
